In a medium saucepan, bring the chicken stock to a boil over high. Add the tomatillos, onion, bell peppers, poblano, jalapeño and spinach, stirring in the spinach one handful at a time until wilted. Bring to a boil and cook over high heat for 15 minutes. Transfer to a blender and purée until smooth.
