Instructions
  1. Peel and cut daikon into thin chips (or sticks). I use a mandoline slicer for even thickness.
  2. Put spices into jar.
  3. Fill jar with daikon chips/sticks.
  4. Mix up your brine (the salt, honey and water) and pour over the daikon. You want them submerged.
  5. Close jar and ferment 5-7 days.

I made this ferment fairly simply, with daikon, salt and red chili pepper as the only ingredients. Daikon stands so well on it's own once fermented.
