Hickory is a good choice for brisket but I prefer to use it in combination with a fruitwood like cherry, which provides for much more balance of flavor to the beef's strength. Keep in mind, there are many varieties of Hickory with some like, shellbark and mockernut hickory being a bit more on the bitter side.
