Ingredients:
  1. 1 cup quinoa.
  2. 2 cups water.
  3. 1 tbsp olive oil.
  4. 1 cup diced low-FODMAP vegetables of choice (such as carrots, green capsicum, broccoli, sweet potato etc.)
  5. Salt and pepper, to taste.
  6. 1/4 cup sliced low-FODMAP nuts (such as walnuts, peanuts)
  7. 2 tbsp freshly squeezed lemon juice.
  8. Fresh herbs (optional, for garnish)
