To make the marinade, mix the garlic, lemon zest and juice, thyme leaves, olive oil, 1½ teaspoons of salt and 1 teaspoon of black pepper together in a large bowl. Cut the lamb into 4 or 5 even pieces and add to the marinade. Use your hands to massage the marinade into the meat.
Ideal as a centrepiece for a weekend meal with friends and family, this tender rack of lamb is served with a fragrant coriander, parsley and mint sauce.
Best to marinate the meat in the spices the day before, so this recipe takes some time, however the small amount of effort is definitely worth it!
