I usually marinate chicken in buttermilk or yogurt when I plan to fry it. I just take it out of the buttermilk and let most of the marinade drip off , dust the chicken in seasoned flour, put it back in the buttermilk and then back in the flour. This creates a crisp, craggly coating that has plenty of flavor.
