In an oven proof pan with a tight fitting lid, add the beef, tinned tomatoes, chopped onion, garlic, curry powder, cayenne, ginger, coriander, ½ cup of water, salt and pepper. Put the lid on and place the pot into the hot oven for 1 hour. Return to the oven and cook for a further 1 hour.
