Remember, the USDA grades beef based on the whole cow, not specifically the brisket. As The Kapn said, cook it properly and until done and it will be fine.

I've having a hard time finding Choice brisket in my area at a reasonable price, but can find Select packers at the local Smart and Final for $1.89/lb.
